The limited-time pop-up opened in Xintiandi on March 25, in partnership with local restaurant CALIX, and has quickly become one of Shanghai’s newest check-in spots. The whole building is covered in Lay’s signature bright yellow, with potato-themed installations, a giant potato food truck outside, and interiors built around the journey from farm potato to finished chip.
The menu was created with Michelin-acclaimed chef Francesco Bonvini and CALIX chef Tian Shuai, turning potatoes and Lay’s flavors into actual dishes. There are sweet and savory mashed potato “Polato” cups with flavors like strawberry chocolate, mango coconut, shrimp salsa, and octopus. Other dishes include squid ink potato pearl pasta, slow-cooked octopus with potato mousse, Spanish-style potato omelet, potato-inspired drinks, and even Shanghai-only chip bowls inspired by crab roe xiaolongbao and tiaotougao. 🥔
Lay’s also teamed up with Chinese designer brand 8ON8 on the space and limited fashion pieces, adding a fashion and lifestyle layer to what could have been just another snack campaign.
At around 200–300 RMB per person, this is clearly not a casual convenience-store chip run. But in China’s experience-driven consumer scene, even a potato can become a full-on weekend plan.
